Here's a recipe I've been wanting to share with you for quite a while! It's my milk and white chocolate chip cookie pizza (quite a mouthful!)
This is a great alternative to baking regular cookies and could be used as a birthday celebration alternative for people who don't like cake, but lets face it who doesn't love birthday cake?!

Ingredients:
170g Butter
200g Light Brown Sugar
100g Caster Sugar
2 Eggs
1 tsp Vanilla
250g Plain Flour
1/2 tsp Baking Powder
1tsp Salt
350g Chocolate (chopped) - can be a choice of milk/white/dark
More chocolate/sprinkles to decorate (optional)

Step 1. Grease and line a 8" baking tin. The ones with a 'loose bottom' are best for this but a regular cake tin will work too. Preheat the oven to 190°C / 170°C Fan
Step 2. Mix together the butter and both the sugars until pale and creamy.
Step 3. Add the egg and vanilla and mix again.
Step 4. Add the plain flour, baking powder and salt and mix until just combined. Add the chopped chocolate pieces and stir together.
Step 5. Place all the mix into your prepared in. Pushing right into all the corners making sure it's flat. (If you're using a very shallow tin and all the mixture won't fit, save some of the mixture and with what's leftover make into smaller cookies baking for around 9 minutes.)
Step 6. Bake the giant cookie for around 35 minutes. You want to make sure the cookie isn't over baked so that it stays nice and fudgey when you cut into it!
Step 7. Leave the cookie to completely cool in the tin and then remove from the tin to decorate. Here I melted some extra chocolate to drizzle over with sprinkles but you can use whatever you like to decorate it with!

This cookie is best served sliced and warm (in a microwave for 20 seconds) with a big dollop of vanilla ice cream!
