Happy Friday!! With just a week to go until valentines day I thought what better way to show someone you love them than by baking these adorable heart biscuits!
These were really quick to make and I would say very simple. I think they took me in total around an hour from start to finish and they definitely got demolished in only a few minutes!!
The vanilla biscuit recipe is a simple classic which could be used in a whole range of ways. They would be lovely decorated with royal icing or covering in sprinkles! Today though I wanted to make them perfect for a loved one with a red hearts theme. The vanilla works really well with the strawberry jam filling and the size and thickness of these was just right!
Here's the recipe if you wanted to give them a go. You could use any shape biscuit cutters you have so it could easily be adapted for Easter or Christmas etc.
Ingredients
100g Salted Butter (softened slightly)
100g Caster Sugar
1 Medium Free Range Egg
1 tsp Vanilla Extract
275g Plain Flour
Strawberry Jam (for filling)
Step 1. Preheat your oven to 190C/170C Fan and line a baking tray with a sheet of greaseproof paper.
Step 2. Combine the butter and caster sugar together. I always use my stand mixer but you could do this with a spatula. Add in the egg and vanilla extract and mix again.
Step 3. Mix in the flour carefully until the mixture is fully combined. It should come together as a firm dough.
Step 4. Wrap the dough in cling film and pop into the fridge for 10 mins to chill.
Step 5. Flour your work surface and roll out your dough to around 1cm thick. Use your chosen cutters to cut out your shapes and transfer to the baking tray.
Step 6. Bake the biscuits for around 9-10 minutes (maybe less for small shapes). Leave to cool on a wire rack.
Step 7. Sandwich two biscuits together using a small teaspoon of jam. Sprinkle with icing sugar to decorate and that's it!!
